What is Mexican Moronga?

At Aqui es Texcoco, we are always trying to bring you the true taste of Mexican Cuisine. What is more authentic than the food our Mothers or even Great-Grandmothers cooked in their kitchens?  In that vein, we now serve Moronga, a Mexican delicacy that you must try at least once.

You may have never heard of Moronga, but you must have heard its brother: Chorizo. Chorizo is a classic Mexican sausage, known far and wide. There are many regional recipes for chorizo, but a version includes ground pork, beef, or chicken and a variety of spices, including oregano, cumin, coriander, and chili peppers. It is usually sold raw, and served throughout the day, especially for breakfast.

Moronga, rellena, or morcilla is a sausage related to chorizo: it is made from a variety of spices (such as oregano and mint); it is encased in the pig’s intestine; it is a classic Mexican dish—a delicacy, even. What makes Moronga more unique is that it is made of the pig’s blood and boiled in the casing. So it is usually not found raw, like chorizo. When Moronga is prepared at home, cooks often pan fry it with onion and jalapeños, then serve it in corn tortillas to make many tacos.

The Next Superfood?

Morcilla is the Spanish cousin of Moronga, and there is even a long-lost relative in England: Black Pudding. What all these foods have in common is that they are high in iron, zinc, and protein, plus they are low in carbohydrates and their fat content depends on the how the chef or cook prepares it. In the last few years this dish as gain more popularity among renamed Chefs and dedicated Foodies. And compared to more-processed meats like bacon and breakfast sausage, one could see why a traditional dish like Moronga could be the Superfood of 2016.
