Origins of Barbacoa
Barbacoa is believed to have originated centuries ago in Barbados, in the Caribbean. The word “barbados” comes from “Los Barbados,” meaning “the bearded ones,” a name given by 16th-century Portuguese explorers.
The indigenous Taíno people used fire-resistant fig branches to cook food, marinating it with herbs and spices. They called this method “barabicu,” meaning “sacred firepit,” which later evolved into the word “barbecue.” This technique helped preserve food and enhance natural flavors.
